Tuna with guacamole
1 packet tuna in water or canned tuna
1-2 avocados (2 if you want extra guacamole)
2 tbsp red onion
2 tsp fresh Cilantro
1 whole wheat pita, lettuce for lettuce wrap, or 1 slice bread
To make guacamole, scoop out the avocado into medium sized bowl. Smash avocado with fork. Chop onion and add to bowl with avocado. Chop the cilantro and add to bowl. Mix ingredients together. Open packet or can of tuna and place one serving ( usually half of can or packet) directly on bread, pita or lettuce. Place 2tbsp of the guacamole on top of the tuna and enjoy! The guacamole replaces mayonnaise in traditional tuna salad. You can always add tomato or cucumber on top to add more texture.
What to do with the leftover guacamole... You can use the leftover guacamole on top of a salad!
