Easy chicken burritos

4-6 boneless skinless chicken breasts ( I used 4 for my family and we had a lot left over)

1 jar salsa ( I used Natures Basket mild salsa)

1 tsp chili powder

1/4 tsp red pepper flakes

1/2 tsp cumin

Whole wheat 8 inch tortillas

Place chicken in crockpot.  Sprinkle the chili powder, red pepper flakes and cumin over chicken.  If you like spicy food you can add 1 tsp of red pepper flakes.  Pour salsa over chicken.  Place crock pot on low 6-8 hours  or high 4-6 hours.  Shred chicken with a fork.  Microwave tortillas on a plate to warm.  Place one tortilla on a plate and top with chicken.  I also topped with guacamole from recipe 1. You can use the leftovers the next day on a salad.  Enjoy!

Turkey tacos


Turkey tacos


1 pound lean ground turkey

1 tbsp chili powder

1tbsp cumin

1 tbsp onion powder

1 tbsp garlic powder

1/4 tbsp crushed red pepper flakes

2 tbsp water

Tomato, cheddar cheese, lettuce for topping

Whole wheat wraps


Brown the turkey in a pan.  Add all spices and water to browned meat.  Place the whole wheat tortillas ( 1 per person) on a plate and microwave for 10-15 seconds to warm.  Fill wrap with the seasoned meat and add desired toppings.   Use leftovers to make a salad the next day.


If you do not want to use whole wheat wraps, try using a romaine lettuce leaf for a taco lettuce wrap!

Recipe 6: Easy breakfast idea


Eggs or egg beaters and bell pepper


1 bell pepper, cut in half width wise to form a ring

Egg or egg beater



Place a slice of the bell pepper in a pan sprayed lightly with cooking spray.  Crack an egg and place inside the green pepper ring.  Cover pan and cook as you would normally cook an over easy egg. You can flip if you would like.  You can substitute egg beaters if you would like.  Also, enjoy with a piece of whole wheat toast.

Something sweet!!!!



Healthy blueberry muffins


1cup whole wheat flour

1cup stevia sweetener

1 tbsp vanilla

1/2 cup unsweetened applesauce

1 tsp baking powder

2 egg whites

2 tbsp brown sugar

1cup blueberries


   Mix applesauce, egg whites, stevia and brown sugar together.  Add vanilla.  Then add dry ingredients.  Mix together then fold in blueberries.  Fill cupcake liners 3/4 full and bake in oven 15-20 minutes at 350 degrees.

Recipe 4 chicken with veggies

Chicken with potatoes and green beans


2-4 boneless skinless chicken breasts (2 for 2servings and 4 for 4 servings

1 package green beans

Small red potatoes, cubed.  I used 3 small potatoes per person

Olive oil

3/4 low Sodium chicken broth


Place chicken in a 9 by 13 inch casserole pan.  Then add as many green beans to the pan as you can.  (I could only fit about 2/3 of the frozen bag of green beans.)  Add cubed potatoes.  Drizzle with olive oil over chicken, green beans and potatoes.  Then drizzle with chicken broth.  Bake at 350 for 1 hour.  For more flavor, if you like garlic and onions, feel free to add slices of each to pan before baking.

Recipe3- butternut squash fries

Butternut squash fries


1 medium  butternut squash

2 tbsp olive oil

Mrs. Dash or pepper. (optional)


Peel butternut squash and cut in half lengthwise.  Remove seeds.  Cut butternut squash into "french fries".  Place into a bowl and add olive oil to coat squash.  On a baking sheet, place a wire cooling rack and place the "fries" on top.  Bake at 400 degrees for 35 to 40 minutes.
