Something sweet!!!!



Healthy blueberry muffins


1cup whole wheat flour

1cup stevia sweetener

1 tbsp vanilla

1/2 cup unsweetened applesauce

1 tsp baking powder

2 egg whites

2 tbsp brown sugar

1cup blueberries


   Mix applesauce, egg whites, stevia and brown sugar together.  Add vanilla.  Then add dry ingredients.  Mix together then fold in blueberries.  Fill cupcake liners 3/4 full and bake in oven 15-20 minutes at 350 degrees.

Recipe 4 chicken with veggies

Chicken with potatoes and green beans


2-4 boneless skinless chicken breasts (2 for 2servings and 4 for 4 servings

1 package green beans

Small red potatoes, cubed.  I used 3 small potatoes per person

Olive oil

3/4 low Sodium chicken broth


Place chicken in a 9 by 13 inch casserole pan.  Then add as many green beans to the pan as you can.  (I could only fit about 2/3 of the frozen bag of green beans.)  Add cubed potatoes.  Drizzle with olive oil over chicken, green beans and potatoes.  Then drizzle with chicken broth.  Bake at 350 for 1 hour.  For more flavor, if you like garlic and onions, feel free to add slices of each to pan before baking.

Recipe3- butternut squash fries

Butternut squash fries


1 medium  butternut squash

2 tbsp olive oil

Mrs. Dash or pepper. (optional)


Peel butternut squash and cut in half lengthwise.  Remove seeds.  Cut butternut squash into "french fries".  Place into a bowl and add olive oil to coat squash.  On a baking sheet, place a wire cooling rack and place the "fries" on top.  Bake at 400 degrees for 35 to 40 minutes.

Inspiration for blog

Welcome to Cardiology One heart healthy recipe site!  This blog was inspired to give you healthy ideas of what you CAN eat!  Many times we tell you what you cannot eat and only have a limited amount of time to discuss what it means to eat healthy.  I am hoping this blog will give you ideas on  healthy food options.  I also think that support is essential to following a healthy lifestyle.  This blog will also give you ideas on how to follow a healthy lifestyle.  Hope this is helpful!  Lots more to come!

Recipe 2- roasted cauliflower


Roasted cauliflower


1 head cauliflower

1/4 cup olive oil

2-3 cloves of garlic, chopped

Parmesan cheese

Pepper


Heat oven to 400 degrees.  Cut cauliflower into florets.  Place on cookie sheet.  Drizzle olive oil over cauliflower and mix with hands to evenly coat.  Sprinkle garlic over cauliflower.  Add pepper on top if desired.  Place cauliflower in oven for 30 to 35 minutes.  The cauliflower will be browned when done.  Sprinkle small amount of Parmesan cheese on top directly after removing from oven.  Enjoy as a healthy side. 

Recipe 1- tuna with guacamole

Tuna with guacamole

1 packet tuna in water or canned tuna

1-2 avocados (2 if you want extra guacamole)

2 tbsp red onion

2 tsp fresh Cilantro

1 whole wheat pita, lettuce for lettuce wrap, or 1 slice bread


To make guacamole, scoop out the avocado into medium sized bowl.  Smash avocado with fork. Chop onion and add to bowl with avocado.  Chop the cilantro and add to bowl.   Mix ingredients together.  Open packet or can of tuna and place one serving ( usually half of can or packet) directly on bread, pita or lettuce.  Place 2tbsp of the guacamole on top of the tuna and enjoy!   The guacamole replaces mayonnaise in traditional tuna salad.   You can always add tomato or cucumber on top to add more texture.


What to do with the leftover guacamole...  You can use the leftover guacamole on top of a salad!
